With Bonfire Night fast approaching I thought it would be fun to share one of my favourite recipes for a special fireworks classic: Toffee Apples! It simply wouldn’t be bonfire night without them…

Simple, delicious and easy to make!

Preparation time: 10 minutes

Cooking time: 30 minutes

Makes 6

Ingredients:

  • 6 Small apples

  • 300g Soft, light brown sugar

  • 2 Cinnamon sticks

  • 2 tsp White wine vinegar

  • 30g Unsalted butter

  • 2 tbsp Golden syrup

  • 50g Flaked almonds

    1. rub your apples so that they are nice and clean. Place a wooden stick inside each apple for your handles!

    2. Line a sheet of baking parchment with tin foil and cover with oil.

    3. Place the sugar in a saucepan along with 100ml of water and the cinnamon.Heat very gently until the sugar is dissolved, then bring to the boil. Add the vinegar, butter and golden syrup and allow to boil for 15-20 minutes. You can check that it is ready by testing the temperature (138 degrees) or dropping a little bit of caramel into cold water and seeing if it separates into strands and hardens.

    4. Meanwhile, toast the nuts in a pan or in the oven until nice and golden. When the caramel is ready remove the cinnamon sticks, add the nuts and take off the heat.

    5. Dip the apples in so that they are smoothly covered by the sticky caramel. If the caramel hardens you can gently reheat it again.

    6. Allow the apples to cool before serving.

Enjoy! I hope you like the recipe!
